Berry Clafoutis

Berry Clafoutis

Yum, great choice! Here's a simple and delicious recipe for a Berry Clafoutis – a classic French dessert that’s somewhere between a custard and a pancake, baked with juicy berries. It’s rustic, elegant, and super easy to make.

Ingredients:

  • 3 large eggs

  • 1/2 cup (100g) granulated sugar

  • 1 cup (240ml) whole milk

  • 1/2 cup (120ml) heavy cream (or more milk for a lighter version)

  • 2/3 cup (80g) all-purpose flour

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 2 cups mixed berries (fresh or frozen; blueberries, raspberries, strawberries, etc.)

  • Butter for greasing

  • Powdered sugar for dusting (optional)

Instructions:

1. Preheat & Prep:

  • Preheat oven to 350°F (180°C).

  • Butter a 9-inch round baking dish or oven-safe skillet generously.

2. Make the Batter:

  • In a bowl, whisk together eggs and sugar until pale and frothy.

  • Add milk, cream, vanilla, and salt. Mix well.

  • Sift in the flour and whisk until smooth and lump-free.

3. Assemble:

  • Scatter the berries evenly over the bottom of the greased dish.

  • Pour the batter gently over the berries.

4. Bake:

  • Bake for 35–45 minutes, or until puffed, golden, and a toothpick inserted in the center comes out clean.

  • It will puff up in the oven and then settle as it cools.

5. Serve:

  • Let cool slightly.

  • Dust with powdered sugar and serve warm or at room temperature.

Optional:

  • Serve with whipped cream, crème fraîche, or vanilla ice cream.
